Anyone else go through phases where eating greens feels like torture, but you also know that you should eat your damn greens? This was me pretty much all of my first trimester when I was pregnant with Edith.
And I still go through these phases now. Like can't I just exist on chocolate? Sounds delightful, but not like my best life.
So when I'm feeling veggie averse (hey! I'm a human!), my go to is to hide veggies in soups, stews, chilis etc. Lately, I've turned to my new favorite greens powder from Vital Proteins. I'm a huge fan of collagen peptides in general (I blend them into my bulletproof coffee each morning). So I was really excited to try the Beauty Greens. Made with minimally processed marine collagen peptides and a blend of powdered raw greens, this powder supports healthy digestion, sturdy, pain-free joints, and strong skin, hair and nails. You can drink it mixed with water or milk, but it tastes a little earthy for my taste. So when I can, I blend it into smoothies, like the one below! This smoothie is also loaded with healthy fats to maximize the absorption of nutrients from berries and greens and promote sustained energy.

Berry Greens Smoothie
1 cup Full-Fat Coconut Milk OR 1 cup Full-Fat Yogurt
1 cup Frozen Mixed Berries
1/2 small cucumber chopped
1 TBLS coconut oil
1 pinch pink sea salt
1 scoop Vital Proteins Beauty Greens
You can also use plain collagen peptides and add a handful of spinach or leafy greens, if you don't have the greens powder on hand.
In a high-speed blender, combine all ingredients EXCEPT the collagen peptides*. Blend until smooth. Add the collagen peptides and blend for an additional 10-15 seconds. Pour into a glass and sip away!
*You don't want to over blend collagen because it changes and damages the protein structure.
