When I had a hankering for a sandwich the other day, I snagged the turkey and havarti from the fridge and a lone green apple caught my eye. Call it a pregnancy craving or inspiration, but I knew just what I was going to do.
My daughter is typically a really awesome and adventurous eater. But like most toddlers, she also goes through phases where she'd really prefer to just eat strawberries, thanks. And other weeks, she'll only wants to eat chicken and nothing else. Leaves this NTP mama begging for variety in her diet... So, we still offer it all hoping she'll be inspired to branch out during her picky streaks.
And I have to say that 90% of the time I trust in her little baby gut wisdom to eat the foods she needs, but sometimes it feels necessary to do a little more encouraging when simply offering isn't enough.
Enter: Berry Gummy Snacks with wait for it... secret spinach. These gummy snacks have healthy protein from grassfed gelatin, fats from coconut milk, and lots of antioxidants, vitamins and minerals from spinach and mixed berries.
Okay there are about a million recipes out there for chia pudding, TBH. But here's MY take on it. The coconut milk, cinnamon and vanilla give it that horchata feel (in a totally not authentic and maybe it's just me way.). The pudding is a pretty great balance of healthy fat, protein and a kick of carbs, so it makes a deeeelightful breakfast too. Dessert for breakfast. whaaa? I know!
Anyone else go through phases where eating greens feels like torture, but you also know that you should eat your damn greens? This was me pretty much all of my first trimester when I was pregnant with Edith.
And I still go through these phases now. Like can't I just exist on chocolate? Sounds delightful, but not like my best life.
